Fish Stick Stir Fry

2 celery stalks, chopped
1/2 bell pepper, chopped
1 cup carrot, chopped
1/2 cup broccoli, chopped
1 cup (or one can) sliced mushrooms
6 fish sticks (I use Highliner battered fish)
1/2 tsp Watkins Cilantro
1/2 tsp Watkins Basil
1 tsp lemon juice
1 tsp Watkins Garlic Flakes
1 cup cooked rice

Cut fish sticks into slices and brown (I used my toaster oven, but can also use a conventional oven). As that cooks, chop up veggies and stir-fry in large skillet, using Watkins Chipotle liquid spice. Add spices and lemon juice. Add fish and simmer 10 minutes or so, then add the rice. Simmer 5 minutes more and serve. Serves 3. (well, it served 2 with left-overs at my house).

Vegetables could be substituted for whatever's in the fridge. I actually made this for the first time tonight, without the rice first, and didn't like it as much. The rice seems to absorb the flavoring or something - it really adds a nice touch to it.
